Bean & Goat Cheese Quesadilla

This recipe comes from one of our favorite restaurants in Charlottesville and is among the few restaurants where you can buy organic options.  Their quesadilla has been the boys' favorite there for years now and is the only thing they order.  They liked it so much they asked me to get the recipe from the owner.  Thankfully, the owner was a friend of mine who was glad to oblige.  After you make the first one, you'll see how easy it is to make and how tasty!  Bon appétit!

Ingredients

16 oz organic refried beans

4 oz organic goat cheese

4 oz shredded organic sharp cheddar

5 oz organic spinach (& arugula blend optional)

1 tsp cinnamon

2 tbs organic chipotle salsa

1 tsp taco seasoning (optional)

8 medium-sized tortillas

1 tbs organic coconut oil

Directions

Combine and mix the refried beans, cinnamon, salsa and taco seasoning.  A key to the yummy, chipolte taste is the cinnamon.  Heat the coconut oil in a frying pan and place on one tortilla.  Spread the fried beans on to the tortilla.  Drop on about 1 oz of the goat cheese and 1 oz of the cheddar.  Next, take a handful of the spinach and place it on top to the cheese.  Cover this with another tortilla and flip it over to warm the second tortilla.  Press the sides together and once the cheese is melted, take it off and let cool.  I cut them into four pieces with a pizza cutter.  This recipe should make four of these quesadillas.
