Serves 4

Ingredients:

  • 1 lb grass-fed ground beef
  • 1 large orange sweet potato (peeled and diced)
  • 1 large Japanese sweet potato (peeled and diced)
  • 1 Granny Smith apple (diced, skin on)
  • 2 shallots (thinly sliced)
  • 2 cloves garlic (minced)
  • 2 tbsp pumpkin seeds
  • Salt and black pepper (to taste)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika (optional for a smoky kick)
  • 1/2 tsp cinnamon (optional, for added warmth)
  • 1/2 tsp cumin (adds earthy depth)
  • Fresh cilantro (chopped, for garnish)
  • 8 eggs (2 per person, cooked over easy or medium)
  • Olive oil (for cooking)

Directions:

  1. Prep and Cook the Sweet Potatoes: Heat a large skillet over medium heat and add a drizzle of olive oil. Toss in the diced sweet potatoes, season with salt, pepper, and garlic powder, and cook for about 8-10 minutes until they begin to soften and caramelize. Stir occasionally to avoid burning.
  2. Add Aromatics: Push the sweet potatoes to the side of the skillet and add the minced garlic and sliced shallots. Sauté until fragrant, about 2-3 minutes.
  3. Cook the Beef: In the same skillet, add the grass-fed ground beef. Break it apart with a spatula and season with smoked paprika, cumin, and cinnamon if using. Cook until browned and no longer pink, about 6-7 minutes.
  4. Mix in Apple & Pumpkin Seeds: Stir in the diced Granny Smith apple and pumpkin seeds. The apple brings a tangy sweetness, balancing the savory beef, while the pumpkin seeds add a nutty crunch. Cook for another 3-4 minutes to warm through.
  5. Fry the Eggs: While the hash is finishing, heat a separate pan and cook your eggs over easy or over medium (depending on your preference). Season with salt and pepper.
  6. Assemble the Bowls: Divide the beef hash mixture into four bowls. Top each with two fried eggs and a generous sprinkle of fresh cilantro.
  7. Serve and Enjoy: Serve immediately, letting the yolk run over the hash for added richness. This dish is great on its own but can also be paired with a fresh side salad for an even more nutrient-dense meal.
