Recipe: Roasted Sweet Potatoes with Sage Walnut Brown Butter Sauce on Whipped Garlic Scallion Ricotta
Servings: 4
Ingredients:
For the Roasted Sweet Potatoes:
- 2 large sweet potatoes, scrubbed and cut into rounds or wedges
- 1 tbsp olive oil
- Salt and pepper to taste
For the Sage Walnut Brown Butter Sauce:
- 4 tbsp grass-fed butter
- 1/4 cup walnuts, chopped
- 6-8 fresh sage leaves
- Pinch of salt
For the Whipped Garlic Scallion Ricotta:
- 1 cup ricotta cheese
- 2 scallions, green parts only, chopped
- 1 clove garlic, minced
- Salt and pepper to taste
Directions:
- Roast the Sweet Potatoes
- Preheat your oven to 400°F (200°C).
- Place sweet potato rounds on a baking sheet. Drizzle with olive oil, and season with salt and pepper.
- Roast for 20-25 minutes, flipping halfway, until golden brown and tender.
- Prepare the Whipped Garlic Scallion Ricotta
- In a food processor or with a hand mixer, blend ricotta, garlic, and scallions until smooth and creamy.
- Season with salt and pepper to taste. Set aside.
- Make the Sage Walnut Brown Butter Sauce
- In a skillet over medium heat, melt the grass-fed butter. Add sage leaves and let them crisp for about 2 minutes, then remove and set aside.
- Add walnuts to the butter and cook for 1-2 minutes until they start to brown slightly.
- Remove from heat and add a pinch of salt.
