Chocolate-Coconut Chia Pudding

We asked one of our good friends, Elisa Bosley, to share a recipe this week. Elisa is a past Managing Editor of Delicious Living Magazine and a widely published healthy food expert. She says of this recipe: “Vegan, no sugar (other than dates), super quick, kid-friendly, and of course delicious :)” She first published it in Delicious Living.

Ingredients

  • 6 medjool dates (pitted)
  • 1/2 cup hot water (for soaking dates)
  • 7 ounces coconut milk
  • 1 1/2 tablespoons unsweetened cocoa powder
  • 1 dash salt
  • 1/2 cup chia seeds
  • 2 cups unsweetened almond milk

Directions

  1. Soak the dates in 1/2 cup hot water for 15 minutes.
  2. Place dates, soaking liquid, coconut milk, unsweetened cocoa powder and salt in a blender and blend until smooth.
  3. Transfer the blender contents into a bowl and add chia seeds and almond milk.  Mix together with a whisk. Cover and refrigerate eight hours or overnight, whisking once or twice.  Bon appétit
