Wrapped in delicate rice paper with a rainbow of crunchy vegetables, miracle noodles, and your choice of protein, these rolls are a refreshing, satisfying meal that requires absolutely no oven or burner.

Ingredients

For the Summer Rolls (makes 8)
 8 rice paper wrappers
 1/2 large cucumber, thinly sliced into matchsticks
 2 carrots, thinly sliced into matchsticks
 2 scallions, sliced lengthwise
 12–16 cooked shrimp, sliced in half lengthwise (or 1 cup pulled rotisserie chicken, or 8 slices firm tofu)
 1/4 cup chopped herbs — cilantro, mint, or basil
 2 tablespoons sesame seeds
 1 package miracle noodles (about 7 oz), drained, rinsed, and patted dry

For the Peanut Coconut Dipping Sauce

 1/3 cup peanut butter (or substitute powdered peanut butter rehydrated with water for a lower-fat option)
 2 tablespoons coconut aminos
 2 tablespoons rice vinegar
 1 tablespoon + 1 teaspoon coconut sugar
 2/3 teaspoon grated fresh ginger
 2 tablespoons warm water (more if needed to thin)
 1/3 teaspoon sriracha (optional)
 Juice of 2/3 of a lime

Instructions

1. Make the sauce: Whisk together peanut butter (or powdered peanut butter rehydrated with water), coconut aminos, rice vinegar, coconut sugar, ginger, warm water, sriracha, and lime juice until smooth and creamy. Adjust to taste. Cover and refrigerate until ready to use (up to 5 days).

2. Prepare the rolls: Set up a rolling station with all your prepped ingredients. Fill a
shallow dish with warm water. Dip a rice paper wrapper for about 10 seconds, until soft but still slightly firm.

3. Lay the softened wrapper on a damp surface. In the center, layer a small amount of miracle noodles, cucumber, carrot, scallions, herbs, protein of choice, and sprinkle with sesame seeds.

4. Fold up the bottom, then fold in the sides, and roll up tightly like a burrito. Repeat with
remaining ingredients.

5. Serve right away with the peanut coconut dipping sauce, or wrap tightly in cling film to enjoy later.
