Fruit + Goat Cheese Salad

A vibrant, feel-good salad that’s equal parts refreshing, nourishing, and satisfying. It’s perfect for backyard dinners, make-ahead lunches, or a light meal that actually leaves you full. Bonus: the creamy lime yogurt dressing doubles as a dip for grilled veggies or chicken.

This salad hits every flavor note—juicy sweetness from the fruit, rich creaminess from goat cheese and avocado, a zesty tang from the dressing, and a satisfying crunch from the seeds. Fresh basil brings it all together with a burst of brightness. It’s a simple “chop and toss,” but tastes like something you’d order at your favorite café.  Bon appétit!

Ingredients:

Dressing

  • ¼ cup olive oil

  • ¼ cup plain yogurt

  • 2 tbsp lime juice (fresh is best)

  • 3–4 tbsp honey (adjust to taste)

  • ½ tsp salt

  • ¼ tsp black pepper

Salad

  • 4 cups loosely packed, finely chopped kale or spinach

  • 2 ripe peaches, chopped (optional – see below)

  • 1 cup blueberries

  • 1 cup chopped mini cucumbers

  • 1 ripe avocado, chopped

  • ½ cup finely chopped red onion

  • ½ cup goat cheese crumbles

  • ½ cup roasted pepitas (pumpkin seeds)

  • ½ cup chopped fresh basil

Directions:

  1. Make the dressing: Whisk together olive oil, yogurt, lime juice, honey, salt, and pepper until creamy and smooth. Taste and adjust the honey or lime juice as desired.

  2. Prep the salad: Finely chop your greens and toss them into a large bowl. Add all remaining salad ingredients.

  3. Combine & serve: Drizzle the dressing over the salad and toss until everything’s coated and delicious. Serve immediately, or refrigerate for up to 2 hours before serving.
