This is a high-protein beef wrap made with nutrient-dense whole foods, like:

Ingredients
Sheet-Pan Mediterranean Spiced Beef

1 lb grass-fed, grass-finished ground beef (80/20 for moisture or leaner if preferred)

1½ tsp ground cumin

1 tsp ground coriander

½ tsp allspice

½ tsp paprika

¼ tsp cinnamon
-
¾ tsp mineral-rich sea salt (Celtic or similar)

½ tsp black pepper

Optional: pinch Aleppo pepper

Tzatziki (High-Protein Yogurt Sauce)

1 cup organic plain Greek yogurt
-
½ cup grated cucumber
-
1 tbsp fresh lemon juice
-
½ tsp lemon zest
-
1 tbsp fresh dill, finely chopped

¼ tsp mineral-rich sea salt
-
1 small clove garlic, finely grated

1 large cucumber, sliced into half rounds

1 small shallot, finely chopped

Instructions
1. Cook the Mediterranean Spiced Beef

Preheat oven to 425°F.

Line a rimmed sheet pan with parchment and lightly spray with olive oil.

In a bowl, gently mix ground beef with all spices until just combined. Avoid overmixing.

Press the beef into an even rectangle on the sheet pan, about ½-inch thick.

Lightly score lengthwise lines to divide into four long sections without cutting through.

Lightly spray the top with olive oil.

Bake 14–16 minutes, until cooked through and lightly browned.

Optional: Broil 1–2 minutes for added color.

Rest 3–5 minutes before lifting into strips.
The goal is light caramelization on top with tenderness inside.
2. Make the Tzatziki

Grate the cucumber and sprinkle with ½ tsp sea salt.

Let sit 10–15 minutes to draw out excess moisture.

While resting, combine yogurt, lemon juice, zest, dill, and garlic in a bowl.

Squeeze the cucumber thoroughly to remove liquid.

Fold the drained cucumber into the yogurt mixture.

Adjust salt or lemon as needed. Refrigerate until ready.
This keeps the yogurt sauce thick, creamy, and structured.
Assembly

Spread tzatziki onto your tortilla or pita.

Layer one strip of beef on top.

Add fresh cucumber slices, chopped shallot, and dill.

Finish with a squeeze of lemon.
