A Breakfast of Superfoods

As I've been reassessing how my family eats and studying the nutrient density of various superfoods, I realized that one of my favorite breakfasts has four power-packed superfoods!  Avocado, broccoli microgreens, and an egg are three of the four superfoods. Organ meat is the fourth and is found in the Pluck spice. This is super simple and super tasty.  The runny egg yolk makes the meal, in my opinion, so don't overcook it.  Bon appétit!
Ingredients:
1 free-range organic egg
2 cups broccoli microgreens (these come from my boy's microgreens business)
1/2 avocado, sliced
1 tsp Celtic sea salt
1 tsp pepper
1/4 cup water
2 tbs Pluck
shallots (optional)
  
Directions:
Create a bed of microgreens on a plate. Fry the egg on medium heat.  I use a liberal amount of coconut oil. As it's frying, sprinkle on the salt and pepper. Then put the water into the frying pan and cover it. This lets the steam cook the top of the egg.  Once the yolk looks cooked, immediately place on the bed of greens.  Place the sliced avocado and shallots on the plate and sprinkle the Pluck spice onto everything.  Easy!
