This is our go-to salad. We eat it a lot because it's both good for you and tasty. I cannot remember where I got this recipe from, but it's not my own. Perhaps what I've added to the recipe is realizing that it goes from good to amazing by using more dressing, more shallots and more parmesan than you think you need. And use freshly grated parmesan. Do not use the pre-grated parmesan, as it has lost a lot of its taste.
3 heads of organic romaine lettuce, chopped
3 oz radish microgreens (or your favorite microgreen, optional)
3 cups diced shallots
3 cups freshly grated parmesan.
2 cups organic olive oil
1/4 cup organic lemon juice (or to taste)
1 tsp salt.
Mix together the olive oil, lemon juice and salt for a dressing. Then add the shallots to the this and mix vigorously.
Place the lettuce, microgreens and parmesan together into a bowl.
Pour olive oil-lemon-shallot dressing into the bowl with the greens. Toss the salad with your hands thoroughly. Make sure all the shallots don't end up on the bottom. Bon Appetit!

Where do you get micro greens? I live in a tiny town in Iowa what can I substitute
@Sandra, I just ⅓ all the ingredients, but mostly, it’s just fun to adjust with eyes and tastebuds!
@Mia, I think it’s shallots and not scallions in the posted recipe. I’ve tried both. Why not experiment?
Same thing with the dressing, just play around with it. Portions, ratios, unlike baking, are so forgiving. Sometimes our eyeballs and tastebuds are the best measurers.

Oh my, the salad sounds delicious … but the portion sizes (3 heads of romaine lettuce & such) … almost too much for 1-2 people…as lettuce type salads won’t store well refrigerated. Can you please provide a smaller portion recipe?
